If you are looking for an eco-friendly way to deal with kitchen waste, you may want to consider Bokashi. I have been using the indoor composting Kit from SCD. I like the convenience of the system--you purchase a five gallon Bokashi bucket as well as a one pound bag of Bokashi starter, which contains microorganisms that help ferment your food waste in the anaerobic conditions inside the bucket. The bucket seals tight, and I'm happy to report that I didn't notice any odor at all coming from the system while it was in use. Another nice feature of the bucket is that it includes a drip tray, which allows liquids to collect in the bottom of the bucket. The spigot that is attached to the bucket allows you to harvest and use this nutrient-rich liquid. You can use it as a fertilizer for garden or house plants (it's strong stuff, and should be diluted to a 1:10 Bokashi liquid to water ratio before use)or you can pour it directly down your drains to keep your septic system healthy.
The system is easy enough to work with. You layer food waste with some of the Bokashi EM mixture, which comes with the kit. When your bucket is full, you set it aside, covered, for approximately ten weeks to allow the contents to ferment. During this time, you should be checking regularly to see if there is any liquid to remove from the bucket. I didn't do this with my first batch, and ended up with a slimy, smelly mess. If all is going well, you'll see white mold forming in the bucket. This means the process is working.
Once the ten weeks is up, simply add the contents of your bucket to your garden (bury it a few inches) or into your compost pile. It will decompose quickly, and you'll be amazed by how many earthworms you see in the area.
All in all, this is a good, efficient system. I recommend it for anyone who is looking to reduce the waste from their home.
